Bacon Wrapped Yellow Pepper Poppers
This recipe is a perfect way to BBQ those sweet peppers from your garden! Cheesy stuffed peppers wrapped in bacon, and smoked to perfection with 100% Black Cherry Cookinpellets. This is a great BBQ appetizer, or light dinner served with a salad.

- 2 packages sliced bacon
- 12 yellow peppers
- 16 ounces Cream Cheese
- 16 ounces Mozzarella Cheese
- 1 white onion
- 4 serrano peppers

Instructions
- Slice and dice the onions and serrano peppers.
- In a bowl combine diced onions and serrano peppers with cream cheese and mozzarella cheese. Mix and set aside.
- Split the yellow peppers in half and remove seeds.
- Fill the cavity of the Yellow Pepper with your mixed cheese filling.
- Wrap with 1 slice of bacon and place a toothpick at the end to hold together.
- Add 100% Black Cherry Pellets to smoker.
- Place bacon-wrapped stuffed peppers in smoker at 350 for 45 minutes or until bacon is fully cooked.
- Remove from smoker. Let cool down for 5 minutes and enjoy!
