This recipe is a perfect way to BBQ those sweet peppers from your garden! Cheesy stuffed peppers wrapped in bacon, and smoked to perfection with 100% Black Cherry Cookinpellets. This is a great BBQ appetizer, or light dinner served with a salad.
Bacon Wrapped Yellow Pepper Poppers
Slice and dice the onions and serrano peppers.
In a bowl combine diced onions and serrano peppers with cream cheese and mozzarella cheese. Mix and set aside.
Split the yellow peppers in half and remove seeds.
Fill the cavity of the Yellow Pepper with your mixed cheese filling.
Wrap with 1 slice of bacon and place a toothpick at the end to hold together.
Add 100% Black Cherry Pellets to smoker.
Place bacon-wrapped stuffed peppers in smoker at 350 for 45 minutes or until bacon is fully cooked.
Remove from smoker. Let cool down for 5 minutes and enjoy!
