Smoked Meat Lover’s Breakfast Casserole

Ingredients
- 1 pound Thick Cut Bacon cut into 1-inch strips
- 1 pound Hot Pork Sausage
- 28 oz Hashbrowns
- 1 Cup white onion Chopped
- 1 Cup Green Bell Pepper Chopped
- 2 Cups Fresh Grated Cheddar or Colby Jack Cheese (can use 1 cup of each)
- 12 eggs
- 1 Cup Sour Cream (room temp)
- Fergolicious Original Seasoning (or your favorite All-Purpose Seasoning)

Prep
- Fill the hopper of your pellet grill with Cookinpellets.com Apple Mash Pellets.
- Preheat the grill to 400 degrees with a griddle on a grate.
- Chop the thick-cut bacon into 1- inch pieces.
Cook
- Place bacon pieces and separated pork sausage on a flat griddle. Brown bacon and sausage for a few minutes until cooked throughout.
- Chop onions and green pepper. Add onions and green pepper to the griddle and cook until translucent.
- Remove bacon, sausage, onion, and green pepper from the griddle and set aside.
- Grease a half-sheetpan (recommend PAM spray). Add hashbrowns to the pan.
- Season hash browns with Fergolicious Original or your favorite All-Purpose Seasoning and mix.
- Layer bacon, pork, onion, and green pepper over seasoned hash browns.
- In a separate bowl, scramble eggs. Season eggs with Fergolicious Original or your favorite seasoning. Add sour cream and mix until a smooth texture. Add grated cheese to the mixture and blend together.
- Pour egg mixture over layers in the pan, spreading evenly. Season more if desired.
- Place the pan on the grill in the center. Check the casserole after 30 minutes by placing the knife in the center and if the knife comes out clean, pull the casserole off the grill.
