Instructions
Prep
- Trim any hard fat or loose edges off the pork brisket.
- Season the pork brisket starting on the bottom with coarse ground black pepper followed by Lawry’s seasoned salt. Repeat the process on the top side.
Cook
- Fill the hopper of your pellet grill with Cookinpellets.com 100% Hickory Pellets.
- Set the temperature of your pellet grill to 275º
- Let the pork brisket smoke until the bark has set and the color is where you want it, for us this was when the pork brisket reached approximately 175º internally.
- Once the pork brisket has good color and the bark is set, wrap it tightly in aluminum foil and return it to the smoker.
- Let the pork brisket continue cooking while wrapped in the smoker until tender, for us this is approximately 203-206º internally.
- After the pork brisket is tender, open the foil and let the pork brisket steam off for approximately 30 minutes.
- After 30 minutes, slice the pork brisket against the grain into thin slices, eat, and enjoy!
