Smoked Baby Back Ribs
Trim your ribs so they are uniform and there are no thin edges hanging off.
Remove the membrane on the back of the rib.
Season the bone side of the ribs first, and start with the all-purpose rub for the first layer, followed by the BBQ rub as a second layer.
Flip the ribs over and repeat the seasoning process on the meat side. Take some time to season evenly and make this look nice, this is the presentation side.
Fill the hopper of your pellet grill with Cookinpellets.com 100% Hickory Pellets.
Set the temperature to 300º.
Once the smoker is up to temperature, put the ribs on and let them smoke undisturbed for 1 hour.
After 1 hour, spritz the ribs with plain warm water. Repeat this process after another 30 minutes.
After 1 hour and 45 minutes or 2 hours, or when the bark is set and you have the color you want, it’s time to wrap the ribs.
To wrap the ribs, use two sheets of aluminum foil. Lay down 3 tablespoons of butter on the foil and then add about 1/4 to 1/2 cup of sauce to the butter. Put the ribs on the sauce and butter mixture meat side down and wrap the ribs tightly.
Return the ribs to the smoker and let cook while wrapped for approximately 45 minutes to 1 hour or until tender, typically between 203-207º between the center bones internally.
Once the ribs are tender, form a foil boat or remove the ribs from the foil and put them back on the smoker for 3 minutes to dry them out and bring some color back.
After 3 minutes, apply the BBQ sauce of your choice and return the ribs to the cooker. Allow them to smoke for approximately 5 minutes or until the sauce has tacked up.
After the sauce is set, remove the ribs from the smoker and let them rest for 10-15 minutes.
After the ribs have rested, slice the ribs, and enjoy!
