Soft Pretzels with Beer Cheese
This is the perfect party or game day appetizer. The soft pretzels are baked on your pellet grill. The pellets add a wonderful smoky flavor that works wonderfully with beer cheese dip. Nothing goes better with soft and chewy pretzels than beer cheese!

Ingredients
Pretzels
- 2 1/2 cups all-purpose flour
- 1 teaspoon Salt
- 1 teaspoon Sugar
- 2 1/4 teaspoon Instant Yeast
- 7/8-1 cup Warm Water
Topping for the Pretzels
- 1 cup Boiling Water
- 2 tablespoon baking soda
- Kosher Salt
- 6 tablespoons Butter, unsalted Melted
Beer Cheese
- 1/4 cup Butter
- 1/4 cup flour
- 1/2 teaspoon Garlic Powder
- 1/2 teaspoon Onion Powder
- 1/8 teaspoons cayenne pepper
- 1 cup Milk
- 2/3 cup Beer
- 1 cup sharp cheddar cheese
- 1/2 cup Mozzarella Cheese
- 1/2 cup Swiss or Gruyere

Instructions
Pretzels
- Preheat pellet grill to 400 degrees.
- Fill grill with desired pellets. ( I used cookinpellets.com’s Apple Mash Pellets)
- Add all pretzel ingredients into a bowl and knead or hand mix for five minutes.
- Cover and rest for 30 mins.
- While the dough is resting make the topping.
- Combine boiling water and baking soda, until the baking soda is dissolved.
- Prepare a baking sheet and put parchment paper and cooking spray on it.
- Divide dough and separate on a lightly dusted tabletop.
- Roll pieces into the desired shape and dump them into the soda and water solution.
- Leave them for a couple of minutes and after put them on the greased pan.
- Top with salt.
- Bake for 12-15 mins. After done baking, roll them in melted butter.
- Let cool and enjoy with some beer cheese.
Beer Cheese
- Melt butter, flour, onion powder, garlic powder, and cayenne pepper over medium heat in a saucepan for 2 mins.
- Stir in beer and milk slowly while whisking.
- Reduce heat to low and add cheese. Stir well while adding in the cheese.
- Serve warm.
