Smoked Spatchcock Turkey

Prep
  1. Begin by removing the backbone of the turkey.
  2. Inject the breast, legs, wings, and thighs with the injectable butter
  3. Spread butter under the skin on top of the turkey breast
  4. Season the turkey evenly with your favorite poultry seasoning blend
Cooking
  1. Fill the hopper of your smoker with Cookinpellets Perfect Mix and preheat to 275 degrees
  2. Once the smoker is at the desired temperature, add the turkey
  3. Every 30 minutes baste the turkey with injectable butter
  4. The turkey is done when it reaches an internal temp of 165 degrees on the thickest part of the breast and 175 degrees on the thigh. The cooking will take approximately 3-4 hours.
