Prep
- Season the chuck roast lightly on all sides with Kosher salt, then heavy coarse black pepper, and finally heavy on the granulated garlic. (Or season to taste, just be careful with salt as the ranch and au jus have quite a bit of sodium in them).
Cook
- Fill the hopper of your pellet grill with Cookinpellets.com 100% Hickory Pellets.
- Set the temperature of your pellet grill to 275º.
- Place the seasoned chuck roast in your pellet grill to smoke.
- Once the chuck roast has a good bark and color, put it in a foil pan and cover the chuck roast with the ranch packet, followed by the au jus packet. Then pour half the pepperoncini juice into the pan and put 8-10 pepperoncini in the pan as well (or to taste). Then put 1 stick of unsalted butter on top of the chuck roast, and wrap tightly.
- Once the chuck roast is wrapped, put it back on the smoker at 275º and continue to cook until the chuck roast is fork tender. This will be anywhere between 210-215º. It is truly a feel and temperature is just a guideline.
- Once the chuck roast is tender, allow it to rest for approximately 20-30 minutes before shredding.
- Once rested, shred the chuck roast, coat in au jus, and build yourself the best sandwich you’ve ever had! Enjoy!
