Smoked Cinnamon Almonds
These smoked cinnamon almonds are a delicious snack or light dessert. The smoky flavor from the 100% Black Cherry Pellets adds the perfect complimentary flavor to this sweet and savory snack.

Ingredients
- 1 pound raw unsalted almonds
- 1 Egg White
- 2 teaspoons vanilla and almond extract
- 1 cup light brown sugar
- 1 teaspoon Cinnamon
- 3/4 teaspoon Kosher Salt
- 1/2 teaspoon ground nutmeg
- 1/4 teaspoon Ground Ginger

Instructions
- Preheat pellet grill to 225 degrees.
- Fill grill with desired pellets ( I used Cookinpellets 100% Black Cherry Pellets).
- In a large mixing bowl beat egg white until frothy.
- Mix in vanilla extract.
- In a smaller bowl, combine the brown sugar, salt, cinnamon, ginger, and nutmeg. Stir.
- Pour almonds into egg white mixture until fully coated.
- Pour cinnamon mixture all over coated almonds.
- Put a baking sheet with parchment paper down, lightly lined with cooking spray.
- Layer almonds evenly on baking sheet.
- Put in smoker until almonds are no longer sticky (about 1 and a half hours).
- Remove from heat to let them cool down and break up almonds.
- Serve and enjoy! Store in an airtight container at room temperature.
