Smoked Butternut Squash Soup

  1. Fill the hopper of your pellet grill with Cookinpellets.com Apple Mash Pellets. (Or your favorite Cookinpellets.com Pellets)
  2. Preheat grill to 400 degrees F
  3. Peel and cut the butternut squash into cubes
  4. Cube one apple
  5. Place apple and squash on baking pan and drizzle olive oil
  6. Season with salt and pepper
Cook
  1. Pop into the smoker for about 30 mins until squash and apples look caramelized
  2. Start boiling 4 cups chicken stock and 1 tablespoon olive oil
  3. Pour in squash and apples and boil for five mins
  4. Allow to cool slightly before using a blender, hand mixer, or hand immersion blender to blend to your desired thickness
  5. Top with sour cream before serving if desired
