Smoked Bourbon Peach Cobbler

- 2 cups all-purpose flour
- 2 tsp baking powder
- 1 tsp baking soda
- 1/2 cup Sugar
- 1/2 tsp Salt
- 8 tbsp Butter
- 1 1/3 cup Buttermilk
Ingredients for Filling
- 1 cup Brown Sugar
- 1/4 cup bourbon
- 2 tbsp Maple Syrup
- 1/2 tsp Vanilla
- 2 tbsp all-purpose flour
- 1 tsp Cinnamon
- 1 tbsp Fresh Lemon Juice
- 6 cups Sliced Peaches

Instructions
Pre Cook
- Fill Hopper with Perfect Mix pellets from Cookinpellets.com
- Set smoker to 350° F
- Prepare the filling. Grab a large bowl and combine all of the ingredients except for the peaches and combine well.
- Once ingredients are incorporated, fold in your peaches.
- Butter up your cast iron skillet.
- Pour your filling into skillet and set aside.
- Prepare the topping. Combine all ingredients except for buttermilk and mix well.
- Once everything is mixed, slowly add your buttermilk and combine.
- Pour your topping over your peach filling.
- Spread as evenly as possible.
Cook
- Place your skillet into your 350° smoker.
- Cook for 45-50 minutes or until golden brown.
Post Cook
- Serve cobbler hot and top with a scoop of ice cream if desired.
