Smoked Apple Cake

Ingredients
- Cookinpellets Apple Mash Pellets
- 5 tbsp Cold Unsalted Butter Plus some softened butter for greasing the pan
- 1 1/4 cup flour
- 1 1/4 tsp baking powder
- 1/2 cup Sugar
- 1/2 tsp Salt
- 1/4 tsp Cinnamon
- 1/8 tsp Ground Cloves
- 1/2 cup Whole Milk
- 2 Large Eggs at room temp
- 1/2 tsp Vanilla
- 1 Large Granny Smith Apple
- 2 tbsp Dark Brown Sugar
- 1/4 tsp Cinnamon
- 1 10-in Round Pan

Instructions
Pre Cook
- Fill hopper with Cookinpellets.com Apple Mash pellets
- Set smoker to 350° F
- Grease pan with softened butter
- Sift flour and baking powder into large bowl
- Add the sugar, salt, cinnamon, and cloves and whisk well
- Add the butter to the bowl and make a coarse meal
- Whisk the milk, eggs, and vanilla and add to the bowl
- Mix until well combined but with a few lumps
- Pour the batter evenly into the cake pan and smooth the top
- Core apple and cut into ⅛” slices.
- Arrange the slices around the pan like the petals of a flower
- Mix brown sugar and cinnamon in a small bowl
- Sprinkle evenly over the top of the apples and batter
Cook
- Place cake pan onto grill gates and smoke for 30 minutes
- Check doneness after 30 minutes with a toothpick
- If toothpick pulls back clean then the cake is done
- This took 35 minutes total
Post Cook
- Remove cake from smoker and place on cooling rack for 15 minutes
- Slice and enjoy
- Serve warm with a scoop of ice cream for an added treat
