Best Pellet Grilled Chicken Wings

These crispy chicken wings make an incredible appetizer, or for a main dinner course served with your favorite sides.  Parboiling renders the fat from the wings and softens the connective tissue.  The results are tender chicken wings with crispy skin – perfect!

Instructions
  1. Place chicken wings in pot and cover with water. Bring to boil and when water boils set timer for 10 minutes. Remove from heat, and skim off fat with large spoon before removing wings.
  2. Place boiled wings on a pan to cool.
  3. After wings have cooled enough to handle, use a towel or two and wring out the excess water from the wings. Squeeze the wing gently in the towel, just enough to dry it out a bit after boiling.
  4. Toss lightly in lemon pepper seasoning.
  5. Set the pellet grill at 425 degrees using 100% Hickory Cookinpellets.
  6. Place chicken on grill and smoke for 35-40 minutes. Turn once at the 20 minute mark.
  7. Check temperature and ensure that it is cooked through to 165 degrees. Remove from grill when chicken is golden brown.
  8. Rest for 5 minutes - they will be very hot!
  9. Enjoy as is! You can also toss lightly in your favorite sauce if you wish.
