5 Cheese Beer Queso with Chorizo
This 5 Cheese Beer Queso with Chorizo is the ultimate party or tailgating appetizer! This amazing dip is filled with layers of flavor from the 5 cheeses, chorizo, beer and peppers. Ingredients
- Cookinpellets Apple Mash Pellets
- 13x9 Foil Pan
- 1 Tbsp olive oil
- 1/4 Cup Chopped Cilantro
- 1 12oz Bottle Beer of Your Choice
- 8 oz Queso Oaxaca
- 8 oz Queso Aserado
- 8 oz Habanero Cheddar
- 8 oz Sharp Cheddar
- 8 oz Hatch Chili Cheddar
- 1 can Rotel Drained
- 1/2 Yellow Onion Diced
- 2 jalapeno peppers 1 Diced and 1 Sliced
- 1 lb Chorizo
- 2 tsp Seasoning of Your Choice

Instructions
Pre Cook
- Fill your hopper on your pellet grill with Apple Mash Pellets
- Set smoker to 225° F
- Saute onion and diced pepper
- Cook chorizo
- Cube up all of your cheese and place in foil pan
- Pour sautéed onion & peppers into the pan
- Pour the can of Rotel into the pan
- Pour the cooked chorizo into the pan
- Pour beer over everything
Cook
- Place pan into your smoked and let it cook for 1 hour
- Stir after 1 hour and then every 30 minutes until all cheese is melted
Post Cook
- Once the cheese is melted remove from the smoker
- Top with sliced jalapeños and chopped cilantro
- Serve with chips
