Smoked Bourbon Peach Cobbler
INGREDIENTS
All Purpose Flour
Baking Powder
Baking Soda
Sugar
Salt
Butter
Buttermilk
Ingredients for Filling: Brown Sugar, Bourbon, Maple Syrup, Vanilla, All Purpose Flour, Cinnamon, Fresh Lemon Juice, Sliced Peaches

INSTRUCTIONS
Pre-Cook
- Fill Hopper with Perfect Mix pellets
- Set smoker to 350°F
- Prepare the filling. Grab a large bowl and combine all of the ingredients except for the peaches and combine well.
- Once ingredients are incorporated, fold in your peaches.
- Butter up your cast iron skillet.
- Pour your filling into skillet and set aside.
- Prepare the topping. Combine all ingredients except for buttermilk and mix well.
- Once everything is mixed, slowly add your buttermilk and combine.
- Pour your topping over your peach filling.
- Spread as evenly as possible.
Cook
- Cook for 45-50 minutes or until golden brown.
Post-Cook
- Serve cobbler hot and top with a scoop of ice cream if desired.
