Smoked Beef Jerky
INGREDIENTS
3lb Eye of Round Roast
1 Cup Brown Sugar
1 Cup Soy Sauce
3 Tbsp Worcestershire Sauce
1 Tbsp Paprika
1 tsp Pepper
1 tsp Red Pepper Flakes
1 tsp Onion Powder
1 tsp Garlic Powder
Any Additional Seasonings of Your Choice

INSTRUCTIONS
Pre-Cook
- Cut the beef into strips
- Make the marinade: add all ingredients into a bowl and make sure brown sugar is completely dissolved as much as possible
- Place the meat strips into a ziplock bag and tenderize it with a mallet
- Put beef into marinade and cover and leave in overnight into the fridge
- After marinating (the following day), fill the hopper of your pellet grill with Cookinpellets.com Apple Mash Pellets.
- Preheat to 165°F
- Lay out a baking sheet with foil for easy clean up and put cooking rack on top. Lay out pieces of beef where they aren't touching
Cook
- Bake for about three hours and rotate it around the centermost rack on the grill
- You know they are done when they don't bend, aren't sticky, and look leathery
Post-Cook
- Allow to rest for 15 minutes
- Store in airtight container or bag
COOKING TIPS
Cut your strips thin or thicker by preference. The thinner strips will cook faster, so be prepare your cook times according to the meat thickness.
