INGREDIENTS

St Louis Ribs Trimmed
W Sauce
16 Mesh Black Pepper
Pineapple Chipotle Seasoning
Diced Pineapple
Pineapple Nectar
Butter
Pineapple Habanero Glaze
Apple Cider Vinegar
Aluminum Foil
For the Sauce: Ketchup, Soy Sauce, Sriracha Sauce, W Sauce, Black Pepper, Brown Sugar, Packed, Pineapple Chipotle Seasoning, Red Pepper Flakes
Pineapple Chipotle Ribs

Take your ribs to the next level with this sweet and spicy pineapple chipotle sauce! Everyone will love these delicious smoked ribs! Impress your family and friends by serving these smoked ribs at your next cookout or tailgating experience.

INSTRUCTIONS

Pre-Cook

  1. Fill the hopper with 100% Hickory wood pellets
  2. Set temp to 250°F
  3. Remove the membrane / silver skin from the ribs
  4. Trim up any loose bits and fat from the ribs
  5. Start the process with bone side first
  6. Apply W Sauce as binder and work into meat.
  7. Apply a light layer of black pepper first
  8. Then apply Pineapple Chipotle rub
  9. Repeat for the meat side
  10. Let rub sweat in while the grill is coming to temp

Cook

  1. Place ribs directly on grill grates and no peeking for an hour
  2. Spray a light mist of water and apple cider vinegar every 30 minutes after the 1st hour
  3. Smoke the ribs until the bark is set and color is where you want it
  4. Prepare the bbq sauce with all ingredients
  5. Bring to a light boil then simmer for 30 minutes
  6. Pour sauce into a blender and lightly pulse
  7. Place foil down. Cut the butter into pats and place it on the foil
  8. Sprinkle some more Pineapple Chipotle rub onto butter
  9. Place diced pineapple onto butter
  10. Drizzle with Pineapple Habanero glaze
  11. Place ribs meat side down onto butter
  12. Wrap up tight, but leave one side open
  13. Pour pineapple nectar into the open end then seal up
  14. Place back onto smoker meat side down
  15. Check for tenderness in 1 hour
  16. Once tender, flip ribs over meat side up
  17. Close lid for 20 minutes and let bark reset
  18. Brush on the bbq sauce that you made
  19. Close lid for 20 minutes or until sauce is tacked up

Post-Cook

  1. Remove ribs from smoker
  2. Let them rest for 10 minutes
  3. Slice them meat side down
  4. Flip ribs and remove pineapples from the wrap
  5. Top ribs with those pineapples
  6. Enjoy!
