Vanilla Creme Brûlée
  1. Preheat the pellet grill to 325 degrees.
  2. Fill the hopper with the desired pellet. I use 100% Hickory Wood Pellets.
  3. In a saucepan on the stovetop combine the heavy whipping cream and salt. Cook low and slow until fully heated.
  4. Add vanilla and stir.
  5. In another bowl beat egg whites and sugar until fluffy.
  6. Slowly add mix the hot mixture and the egg whites mixture together.
  7. Pour into ramekins. Place the ramekins on a baking dish large enough to fill up halfway with water. Be sure not to get any water into the ramekins.
  8. Bake for 30-40 minutes until the centers are barely set.
  9. Cool completely. When ready to serve sprinkle sugar on top torch it to create a hard layer.
  10. Serve cold and enjoy!
