Smoked French Onion Soup

Smoked French Onion Soup
  1. Preheat the pellet grill to 325 degrees. Fill the hopper with your desired Pellets. I used Apple Mash Pellets.
  2. Chop up onions to the desired size.
  1. In a pot over medium heat, saute onions in butter.
  2. Stir in salt and sugar, and cook for 30 mins, mixing every 5 mins.
  3. Add garlic, bay leaf, beef and chicken broth, Worcestershire, thyme, and white wine. Mix well.
  4. Pop in the grill for 20 mins stirring occasionally.
  5. Remove the herbs from the soup.
  6. (optional) Grill the French bread on low racks of the grill
  7. Pour soup into bowls and top with bread and all cheeses.
  8. Let cool for 5 mins and then ENJOY!
