- Cookinpellets.com Grilled Steak Seasoning
- 2 pounds Flank Steak
- 1 Shallot Diced
- 1/4 cup Basil Chopped
- 3 cloves garlic Chopped
- Avocado Oil
- 8 oz Prosciutto
- Fresh Spinach
- Sliced Mozzarella
- Sun Dried Tomatoes
- Butcher's Twine

Instructions
Pre Cook
- Fill the hopper with Cookinpellets.com Longhorn Blend Pellets.
- Set Smoker to 225°
- Butterfly the flank steak and pound it thin.
- Rub avocado oil onto to flank stea.
- Sprinkle Cookinpellets.com Grilled Steak Seasoning onto flank steak and pat rub in.
- Rub shallot, basil, and garlic into the steak.
- Layer with prosciutto and sliced mozzarella.
- Top with spinach.
- Place sun-dried tomatoes in the center.
- Roll up the steak tight.
- Tie 4 strands of butcher twine tightly around the steak to secure it.
- Season with more Cookinpellets.com Grilled Steak Seasoning.
Cook
- Place the steak on the grill.
- Smoke at 225° until internal temperature reaches 140°
- Once the steak reaches the appropriate temperature. Sear it.
Post Cook
- Allow to rest before slicing.
