Smoked Cinnamon Almonds

raw unsalted almonds

Egg White

vanilla and almond extract

light brown sugar

Ground Ginger
Instructions
Preheat pellet grill to 225 degrees.
Fill grill with desired pellets ( I used Cookinpellets 100% Black Cherry Pellets).
In a large mixing bowl beat egg white until frothy.
Mix in vanilla extract.
In a smaller bowl, combine the brown sugar, salt, cinnamon, ginger, and nutmeg. Stir.
Pour almonds into egg white mixture until fully coated.
Pour cinnamon mixture all over coated almonds.
Put a baking sheet with parchment paper down, lightly lined with cooking spray.
Layer almonds evenly on baking sheet.
Put in smoker until almonds are no longer sticky (about 1 and a half hours).
Remove from heat to let them cool down and break up almonds.
Serve and enjoy! Store in an airtight container at room temperature.
