Smoked Cinnamon Almonds

  1. Preheat pellet grill to 225 degrees.
  2. Fill grill with desired pellets ( I used Cookinpellets 100% Black Cherry Pellets).
  3. In a large mixing bowl beat egg white until frothy.
  4. Mix in vanilla extract.
  5. In a smaller bowl, combine the brown sugar, salt, cinnamon, ginger, and nutmeg. Stir.
  6. Pour almonds into egg white mixture until fully coated.
  7. Pour cinnamon mixture all over coated almonds.
  8. Put a baking sheet with parchment paper down, lightly lined with cooking spray.
  9. Layer almonds evenly on baking sheet.
  10. Put in smoker until almonds are no longer sticky (about 1 and a half hours).
  11. Remove from heat to let them cool down and break up almonds.
  12. Serve and enjoy! Store in an airtight container at room temperature.
