Mexican Street Corn
Instructions
Prep
  1. Preheat the pellet grill to 400 degrees.
  2. Fill the hopper with your desired Cookinpellets.com pellets. ( I used cookinpellets.com’s Apple Mash Pellets).
  3. Remove the husks from the corn. Place the husked corn into aluminum foil.
  4. Season the corn with olive oil, butter, salt, and pepper.
  5. Wrap the corn loosely in the foil and poke holes for air to escape.
Cook
  1. Grill the corn for 20-25 mins, turning occasionally.
  2. After cooking let the corn cool and cut corn off the cob.
  3. Add your desired amount of mayo to the corn, mixing well.
  4. Put the corn into individual bowls.
  5. Add lime and hot toppings.
  6. Enjoy!
