Best Boston Butt Recipe

Ingredients
Injection Recipe
  • 2cups Apple Juice
  • 3tablespoons beef bullion
  • 1-2 cups reserved drippings from cooking ribsWhen cooking ribs, foil them after 3 hrs bone side down. Put butter, honey and brown sugar on meat side. Tent the foil so you can retrieve the drippings after cooking in the foil, for approximately 2 hrs. Have a bowl handy and undo one side of the foil and pour drippings into it.
Instructions
  1. Heat up the injection ingredients, thoroughly mix, then cool.
  2. Inject cooled mixture thoroughly into meat.
  3. Lightly coat meat with mustard.
  4. Coat meat with BBQ rub. Wrap with plastic wrap and return to refrigerator until ready to cook.
  5. Set smoker at 225 degrees with Cookinpellets 100% Hickory Hardwood Pellets.
  6. Pellet Grill for 10 hours.
  7. After 10 hours, remove butt from grill. Place upside down in aluminum pan. Add about 1 cup of leftover injection liquid into bottom of aluminum pan. Cover with aluminum foil.
  8. Increase pellet grill temperature to 250 degrees.
  9. Return meat in aluminum pan to pellet grill.
  10. When internal temperature of meat reaches 204 degrees, remove from grill.
  11. Allow to rest in the pan for 30 minutes.
  12. Slide bone out of meat, and gently shred meat with spoon or spatula.
  13. No need to add sauce! Serve and enjoy!
Recipe Notes

Save the rib cooking juice/drippings any time you smoke ribs! Pour drippings into ziploc bag and freeze until the next time you make this Boston Butt recipe.  You won’t regret it!

This is a great recipe for an overnight smoke! If you put your meat on the pellet grill at 830 pm, at 630 am you can put it in the pan and tent with foil, then remove from grill at 730.  By 8 am your meat is ready to go into the fridge, and dinner is ready! Great BBQ hack!
